This is a yummy eggless aioli style dressing which after a day in the fridge, alchemically develops its flavours, until it has something of a cheese flavour – a must have for those who don’t do dairy.
1/4 c soy milk
1-2 lemons (or equiv vinegar)
Process in food processor till smooth.
While food processor is going, drizzle olive oil very gradually into mixture until you feel you have added the amount you want and it tastes about right.
The quantities here are approximate and can be adjusted according to taste (ie more lemon/vinegar).
Then add any extras you want like herbs, garlic, salt, etc.
Put it in the fridge and later that day, or next day, the soy milk will have done some kind of alchemic thing and taken the dressing to another level.
