Children love these, they are quick and easy, taking a minute to prepare in the food processor & roughly five minutes to cook.
- 500g red cod
- 1/4 cup of organic flour, more or less
- pinch good quality flakey sea salt
- olive oil
- lemon
Put fish in the food processor and using a steel blade, turn into paste.
Add flour and salt - more or less according to taste - more flour will make the mixture more easily moulded into fingers - and process briefly.
Heat enough oil in a non stick wok shaped pan (or a wok) to semi deep fry (about a cm deep).
For nuggets drop in spoonfuls, for fingers mould into a sausage shape.
Turn over when crispy. Serve with a squirt of lemon to taste.
This can be spiced up for adults with the addition of Thai curry paste. Make the recipe and divide into two batches, one for the children and one for the adults. (This gets round the problem of having your food experiences limited to things the kids will eat.)
